My Dinner from Miz Helen's Kitchen Table

I tend to read cookbook as if they were novels.  I love reading little anecdotes written by the cookbook author, and when they share that a particular recipe was a family favorite.  






A while back I 'met' Miz Helen through her blog, and decided this was a cookbook I wanted to buy.  It was late June, however, and during the summer I am not into cooking, and this summer was a hot one.  But I had certain recipes picked out that I wanted to try, and this is the first one.  


Only in a cookbook would I ever fold a page!  A sure sign of a good recipe


Mushroom Burgers

1 pound ground chuck
1 can cream of mushroom soup
2/3 cup breadcrumbs
2 tablespoons onion, minced
1 tablespoon parsley, chopped
1 egg, beaten
1 tablespoon butter

Mix 1/4 cup mushroom soup with the ground chuck, bread crumbs, onion, parsley and egg.  Form patties and cook until done in butter.  Blend remaining soup with 1/4 cup water.  Pour over patties, cover and cook five minutes, stirring.  Serve on toasted buns.  Only changes I made were I used a 93/7 ground beef and used oil rather than butter.

These low carb rolls from Whole Foods Hearth Breads are great.  Each roll contains 110 calories, just 16 grams of carbohydrate, 4 grams of fiber, 8 grams of protein and 210% of folic acid!  






A friend brought these from WF in Florida.  Because of regional differences, I am unable to get them at the WF where I shop in New Jersey.  






But I have started a campaign of sorts to get these rolls here.  If you see them in your local WF store, try them, you will like them. 


Since I made one, I "fudged" the sauce a teeny bit, still delish!
Miz Helen adds that this was her son Ron's favorite when he was a little boy, and she still uses this recipe.  I can certainly see why, it is a keeper.  Thanks, Miz Helen.  I hope I did this recipe justice.

    Well, that certainly looks like a complete meal in itself.....would one need to eat for a week afterwards?!!!

    As we are no cooks, we cannot even pretend to enjoy looking at cookery books but we are with you on sticking to something or someone if the receipts work!!!

  28. Wow, that looks delicious and how awesome that you got to meet the author through her blog!

    I just found out about my books and from what I understand (I have to read about it on Amazon) there's a free download that makes it so people can buy Kindle books and read them on their computers--I had no idea! That is my understanding, but like I said, I have to re-read it and make sure that is possible.

    These burgers looks delicious! I collect cookbooks and read them the way you do. I had seen Miz Helen's cookbook on her blog, but I haven't ordered one. It looks like one that I'd like. You're so lucky to have a Whole Foods in your area. We had one when we lived in another city, but there is not one around here. I really miss that store!

  39. Barbara, this looks yummy! We make hamburger patties or crumble the hamburger with a dash of garlic salt, cook in a frying pan. When they are done put in a can of mushroom soup & a 1/2 c, milk & stir away, leaving meat in the pan the whole time. Add more milk as needed to make a gravy, sometimes it takes a whole can of milk, but we like ours thick.

    Pour over white rice ... oh,yummy!
