Cinco de Mayo, need some guacamole

Any day is a good day for some guacamole, in my opinion.   I found this "kit" at Trader Joe's.   Makes it even easier to whip up a batch when the mood strikes.



They included a recipe on the back



The avocado needed to ripen a bit so I had to wait. 
Next time I'll do a little ripeness squeeze test



There was a few cloves of garlic, too



I was in a chunky guacamole mood



Made some homemade chips, using corn tortillas, lightly misted with oil, sprinkled some cumin and oregano, and bake in 350 oven for 15-20 minutes

A mini fiesta for your taste buds.

  6. I love guacamole and yours looks delicious! We used to put the avocado in a brown paper bag to help it ripen-not sure if it really worked or we just thought it did! Your homemade chips look yummy too! Linda

  20. No, there were no Mexican restaurants in NYC, or the fast food kind. There was one that was a classic called, 'Fonda la Paloma' and I'm sure it's still around. Mexicans seem to stay by the border states and California, because of the proximity to home in Mex. in those days. Now it's difficult to go in and out of the USA. Believe me there were only Puerto Ricans and Cubans fleeing communist Cuba! There were hardly South Americans either, except for some Colombians, but Ecuadorians, were none, too! Thank you for your visit and for the sweet comment, you made my day and yes, maybe we should have some Tequila!

    Mexican food is very popular here in Colorado, Barbara, and I have been learning more about it as I am a real novice when it comes to this cuisine. I'm loving it!

  23. Hi Barbara, your post made me smile. When Kerstie was pregnant with Bunny we had a Cinco de Mayo party for her and she and Chloe made the most delicious guacamole in the world. We served it with our "hotter than a trophy wife" salsa which we make every year and it was so good and the party was so much fun. I always forget how delicious guacamole is and rarely make it, but it's so good with chicken salad, leftovers, so may things. Why do we always assume it has to be eaten with chips? Thanks for the lovely reminder. :)

  25. Guacamole is one of my favorite foods! I usually do a very simple version. I smash my avocados and simply stir in some chunky salsa as it has all the seasoning already in it! Yummy!

  29. Barbara, I wish we had a Trader Joe's. I keep hearing great things about it, and from the looks of that kit and your guacamole, I see what we're missing. That really looks delicious. There is nothing I love more than fresh guacamole. It really is one of my favorite foods. Love how you made your chips, too. Good idea there.

  36. Cinco de Mayo recently became a big thing around here a few years ago as a large population of Latinos are settling in our area. What a fun day to celebarte!! They even had a celebration where I work...

  38. True confession time again. I have never made my own guacamole. I do make my own salsa, but never the other. Yours looks delicious, and I'm a chunky guacamole kind of girl just about any day.

    Happy Cinco de Mayo... or whatever the 6th of May is called. I'm not sure how you say "A Day Late" in Spanish.

  45. I'd go for chunky any day, even though I'm not a big, big fan of guacamole, DH surely IS! We didn't get to celebrate Cinco de Mayo, since I was away but I've been hungry for Mexican food ever since. I wish our Trader Joe's was closer. :-(

    Great idea to doctor up the tortilla chips...I must make a note of that & try to remember.
